Olive oil is one of the most important Italian productions exported thanks to its health benefits and excellent quality of production in Italy. A high percentage is produced in this area between the Karst and Istria. Here is one of the typical productions in Muggia.
The characteristics of olive oil
Olive oil is an edible oil extracted from olives; in particular the extra virgin oil comes from the first press of the olives produced mechanically. Studies have confirmed and proven its healthy organoleptic properties and is now considered an important cuisine element thanks to its high content of mono-unsaturated fats. Among the agri-food products of the Italian tradition, olive oil for centuries represented the main protagonist of the Mediterranean diet. Italy is one the world’s largest high quality olive oil producer.
According to the most recent Food-Based Dietary guidelines, quality extra virgin olive oil is for all ages: children, the elderly and athletes. Easily digestible, it is a precious ally for our health: it reduces the risk of developing cardiovascular diseases, it is the key to a beneficial diet for people who have diabetes, it helps to prevent various types of neoplasms and has beneficial effects in the gastrointestinal tract and on the nervous system.
Olives of the Karst
In the setting of the Karst region in eastern Italy, extra virgin olive oil from the native Bianchera variety is being produced in the municipality of San Dorligo della Valle, part of the Friuli and Istrian tradition. Bianchera is a cold hardy plant resistant to the bora wind that sweeps into our territory. Its fruiting tree branches tend to be vertical and pruning is therefore needed to reduce the density of the foliage. The oil produced is the highest quality extra virgin olive oil with a lower acidity and very high polyphenol concentration value, an intense, bitter and somewhat spicy fruity aroma with herbaceous notes, which perfectly pairs on soups and meat.
Fior Rosso Olive Oil
Located in the municipality of San Dorligo della Valle, the Fior Rosso farm has been producing extra virgin olive oil from the native Bianchera variety since 1823 with passion and love. Oil produced here offers excellent quality and organoleptic characteristics. The oil has a medium intense herbaceous fruity aroma with hints of artichoke, almond and tomato producing a bitter and spicy sensation.
